- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 large carrots, peeled and chopped
- 8 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 8 oz egg noodles
- 2 tbsp chopped fresh parsley
- Season the chicken breasts with salt and pepper. Add the chicken breasts and cook until browned on both sides, about 4 minutes per side.
- Add the garlic, onion, celery, and carrots to the pot and cook until softened, about 5 minutes.
